5 Healthy Recipes For Diwali: A Nutritious Organic Buffet

You will feel relief at hand because we are rolling out 5 recipes using organic ingredients to keep you fit even during Diwali.

 

 1 - Broken Wheat & Flax Seeds Ladoo

Savour some traditional yet healthy delight for the winterish Diwali. Enjoy this healthy amalgam of Broken Wheat (proteins)  and Flax Seeds (fiber, omega-3) rolled into one.

Ingredients

Terra Greens Organic - Wheat Daliya (Broken Wheat )

½ Cup (Soak it for 4-5 hours and drain it using sieve before preparation)

Terra Greens Whole -Wheat Atta

½ Cup

Terra Greens Organic Flax Seeds

3 Tablespoon

Terra Greens Organic - Cow Ghee Bilona

5 Tablespoon

Terra Greens Organic - Jaggery (Grated) Jaggery

¼  Cup

Almond & Pista

Finely Chopped - 3 Teaspoon

Cardamom Powder

¼ Teaspoon

Nutmeg Powder

¼ Teaspoon

Method:

  1. First, roast flax seeds on a low heat (4-5 mins) till you hear crackling sound. Let it cool to grind it into a coarse powder.
  2. Now, dry roast the whole-wheat flour on a low heat till golden brown. Keep it aside.
  3. In a heavy-bottomed pan, heat 2 teaspoon  Bilona Ghee and then roast the broken wheat on a very low flame.
  4. Keep stirring till the broken wheat turns light brown colour and all the moisture dries up. (normally takes up to 20-25 minutes). Once done, transfer it into another bowl.
  5. Now, in another pan, heat the remaining 2 teaspoons Bilona ghee and then add the grated jaggery. Keep on a low flame and allow it to melt till it attains a syrupy consistency with froth on top. Once done, turn off the flame.
  6. Now mix the syrup, flax seed powder, and roasted broken wheat together. Then add chopped nuts, cardamom powder, and nutmeg powder.
  7. Add  ¾ of roasted whole-wheat flour and mix well using a wooden (optional) spoon.
  8. Now, take a spoonful of mixture and use your palms to roll them into balls (size of a lemon). Add more flour if it is too wet.
  9. Repeat the same with the remaining mixture. Allow it to cool down for some time. Later, store in airtight container.

2 - Green Peas & Soya Tikkis

Appetizers are fun kick-starters to a party. Celebrate a healthy reunion of Green Peas & Soya Granules.  Start your festive meal with our spicy and delicious Green Peas & Soya Tikkis, now made with organic ingredients.  

Ingredients

Green Peas

½ Cup

Soya Granules

½ Cup

Green Chillies

Finely Chopped - 1 tbsp

Ginger

Finely Chopped - 1 tbsp

Oil

1 tbsp

Salt

As Per Taste

Semolina / Rava

For coating

Method:

  1. Boil green peas for 5 mins and then dry it. In the meantime, soak the soya granules in hot water for 8-10 mins and squeeze it out.  
  2. Now, blend both the ingredients to make a fine smooth paste. Add the green chillies, ginger, besan, salt and mix well to make a thick mixture.
  3. Divide the mixture into 3-4 equal portions to shape it into round, flat tikkis. Brush them with little rava on both the sides to make it crispy.
  4. In a non-stick pan, add 1 tbsp or using little quantity, fry them till both sides turn golden brown.
  5. Serve them hot with mint chutney. Your tasty and spicy Diwali appetizer is now ready.   

3 - Spicy Mint Pulao  

Celebrate Diwali with the oldest herb in the kitchen. The flavorsome Mint is just a magic, neither over-powering nor subtle. With the festivities nearby, people often worry about their calorie count or hanging bloats at the end of the celebration. Now fearlessly drool over this delicious and easy to make flavour-packed spicy mint pulao.

Ingredients

Terra Greens Organic - Basmati White Rice

1 Cup - Soak for 30 mins and then drain the water.

Large Onion

1 - Thinly Sliced

Peas - (Prefer Fresh over Frozen)

½ Cup

Broccoli

1/4 Cup - Chopped

Phalada Olive Oil (Any neutral tasting oil)

3 Tbsp

Water

For  Mint Mix  

Note: Have the mixture ready before preparation

Fresh Mint Leaves

Green Chilli

Method:

  1. In a pan or pressure cooker,  heat oil, add all whole spices and saute. Remember to use a pan preferably with a lid, for this recipe.
  2. Now, add thinly sliced onions and saute till they are slightly cooked (approx.  2 minutes).
  3. Add the green peas, broccoli and sauté for another 2 minutes.
  4. Once done, now add the mint mixture, rice and evenly sauté everything for 2 more minutes.
  5. Add water. If using a pressure cooker, then cover the lid and steam till 3 whistles and turn off the heat. If using a pan, cover with lid, lower the heat and allow it to cook for 15 minutes. It can be served with curd or any lentil curry. Enjoy.

4 - Restaurant Style  Dal Tadka

The most popular recipe in Indian household can now be relished during Diwali as well. Always decorated on the top of your restaurant menu, Dal Tadka tastes amazing with Roti, Chapati or any other rice cuisine. This recipe is a mix of 3-4 dal, incorporated to increase the protein level. Enjoy a  lip-smacking and flavourful lentil delicacies this Diwali.

Ingredients

Arhar Dal (Yellow Pigeon Peas)

1 Cup

Moong Chilka Dal(Green Gram Split)

½ Cup

Moong Dhuli Dal (Yellow Split Peas)

½ Cup

Terra Greens Organic Masoor Dal (Pink Lentil or Split Red Lentil)

Method

For Making the Dal/Lentil:

  1. In a pressure cooker, add all the dals with water, turmeric, salt and close the lid. Pressure cook on high flame until the first whistle.
  2. Now reduce the flame to medium and cook till 3 more whistles and then turn off the heat.

For Tadka / Tempering:

  1. Heat ghee in a non-stick pan, add cumin seeds, cloves and let them crackle on medium heat.
  2. Now add onion and sauté till golden brown, add garlic and sauté for 1/2 minute.
  3. Add tomato, green chilli, red chilli powder, asafoetida and sauté everything for 1/2 minute and lower the heat.
  4. Let the spices and masala cook for about 1 more minutes. Turn off the heat.
  5. Transfer hot dal in a serving dish. Pour the tempering over it and decorate with fresh chopped cilantro. Serve hot with roti or a rice dish.

5 - Almond Halwa

Ingredients

Terra Greens Organic Almonds - (Peeled)

½ Cup

Terra Greens Organic Sugar

⅓ Cup

Saffron

Few Strands

Phalada Green Cardamom (Seeds Powder)

⅛ Tbsp

Milk

Method
1. Blend almonds (soaked & peeled) with sugar, cardamoms, saffron, milk and grind it into a fine paste.

2. In a pan, heat ghee: add the blended almond paste and cook till it thickens.

  1.  Once it reaches the desired consistency, turn the heat off.
    4. Garnish with nuts and serve hot!
